How we calculate
Every gold ingot you throw to a piglin is one barter, and the game picks exactly one of 19 outcomes. Each outcome has a weight and together they add up to 469: ender pearls, for example, have a weight of 10, so they come up in 10 barters out of 469, about 2.1% of the time, and in stacks of 2–4.
The average is how many items one ingot gives on average. The chance of reaching your target is worked out exactly by going through every possible result, so it accounts both for dry streaks and for barters that give several items at once.
Weights and amounts come from the bartering table in the 26.3 game data. Newer versions added the dried ghast to it, so older tables that add up to 459 are out of date.

Questions and answers
How much gold do I need for 12 ender pearls?
One ingot gives 30/469, or about 0.064 pearls, on average, so 12 pearls take roughly 188 ingots. The calculator shows the exact chance for your amount of gold separately, so you can see how many ingots to bring for a safety margin.
What drops most often?
Nine outcomes share a weight of 40: obsidian, crying obsidian, fire charges, leather, soul sand, Nether bricks, spectral arrows, gravel and blackstone each have 40 out of 469, about 8.5% each.
Can I get a dried ghast?
Yes, with the same chance as ender pearls: 10 out of 469, about 2.1% per ingot. That is one ghast per 47 ingots on average.
Which version are these numbers for?
Java Edition 26.3: weights and amounts come from the bartering table in the game data. Some outcomes differ in Bedrock Edition.
